I want to know what word is used for the 'pet word' we use in our conversation. e.g. " I mean", "actually", "you know", these words are used in the conversations to buy time to recollect our ideas. These words are frequently used by some in their conversations.

They are called as fillers.

ya these are called fillers and using these fillers is also known as INDIANISM because only indians need to use them as they are not fluent in english.they need to think a bit before speaking.
